Thousand Island Chicken

This was one of my fav dishes growing up that my mom used to cook. And I am now sharing with you… you’re welcome ;).


  • 1 lb boneless, skinless chicken breasts
  • Thousand Island Dressing
  • Bread crumbs
  • Olive Oil
  • 1 Egg
  • Swiss cheese (1 piece per piece of chicken)

Step 1: Take chicken, dip in beaten egg and coat in Italian style bread crumbs. Then put into hot pan with olive or veggie oil and cook.

Step 2: Once chicken is lightly browned and cooked through, take out of pan and put into glass baking dish. Put around 3 tablespoons of Thousand Island dressing on each breast (or enough to have a nice layer on top). Then place 1-1.5 pieces of swiss cheese on top and broil on low for 10 mins until cheese is browned and bubbling.

Step 3: While the chicken is broiling, pick your sides. My hubby loves Mac n’ cheese so I made that with some fresh green beans with minced garlic in olive oil.

Overall a pretty simple recipe, but it tastes much more complex with the flavors of the dressing, breading, and Swiss.

    Yeah, one of my favorites, too. Of course I’m pretty lazy so we skip the breading, just bake it, then top with the dressing and Swiss and broil. I guess its healthier, but either way, its slathered in dressing.
