Stuffed Green Peppers

It’s getting to be that time of year again… chilly weather, sweaters, staying at home getting cozy. One of my favorite meals to make around this time of year is one that I learn from my mom (thanks mom!). Here’s what you need:

  • 3-4 green peppers
  • 1 lb lean ground beef (I prefer 97/3)
  • 1 can tomato paste (Italian seasoning)
  • 1 cup uncooked white rice
  • 2 tsp minced garlic
  • 1 can tomato sauce
  • 1 can diced tomatoes
  • 2 roma tomatoes; diced
  • 1 egg

Step 1: Cook rice; when the rice is cooked, mix the rice, egg, garlic, and meat. Add a little salt and pepper.

Step 2: Cut the top off the green peppers (wash of course), and stuff with the meat mixture.

Step 3: Fill large pot with all cans of tomatoes, 3 small cans of water, and diced tomatoes; add stuffed peppers to pot. (If there is meat that won’t fit in the peppers, add bread crumbs and make meatballs. Drop into pot.) Make sure that the tomato sauce mixture is covering all the peppers mostly.

Step 4: Cook on medium heat for 20 minutes.

It’s really nice if you serve it with some toasted garlic French bread. Yummy!

    If you precook the meat, too, you can cut down the baking time which leaves the peppers a little crunchy and much less bitter!
